Apple Chicken Stuffed Kabocha



Apple Chicken Stuffed Kabocha! It’s a meal in one!

Pre heat oven at 350, Cut kabocha (aka Japanese pumpkin, aka squash) in halves, place open side down in baking pan filled with half inch of water. Bake for 40 min or until tender. On stove top, cook chopped onions, celery and ground chicken until brown. Then throw in apple cubes and seasoning (salt and other herbs you want). Then mix some goat cheese in.

After squash is baked for 40 min, stuff with all cooked ingredients. Then sprinkle a little bit of panko and finish baking for another 20min.
