Baked Chicken Wrapped Asparagus with Cilantro Lime Brown Rice & Quinoa Mix. That’s what’s for dinner!
Pre heat oven to 350, Cut chicken breast in half, use a tenderizer to flatten into thin filet. Wrap around asparagus, place on greased baking sheet (olive oil). Bake for 20-30 min.
Heat & mix cooked brown rice & tri color quinoa. Toss in chopped cilantro & squeeze lime juice and mix well.
Spread a bed of rice/quinoa on plate, place chicken on top, sprinkle fresh cilantro leaves on top and enjoy!
