Baked Sweet Potatoe Hash with Scallops.
Pre heat oven to 400 degrees. Cut sweet potatoes and zucchini into cubes. Slice some red onions. Grease baking pan with olive oil. Mix everything together in baking pan. Add rosemary. Bake for 25 min.
Clean scallops, season with Himalayan salt, then cook in skillet for 2 min on each side. Season with lemon pepper.
Place everything on plate, top baked sweet potatoes with sunny side up egg and enjoy!
