Cauliflower Fried Rice for dinner! On a tofu/asian kick lately and this dish came out delicious!
Prepare cauliflower into florets and using a grater or food processor to make cauliflower into fluffy rice texture.
Dice scallions, white onions and garlic. Set aside.
Scramble eggs and make an egg pancake, set aside and cut into slices. Cut cubes of firm tofu, add ponzu sauce and heat in skillet. Set aside both eggs and tofu.
Spray pan with coconut oil, then toss in garlic, white part of scallions and then onions. Once aroma sets in, toss in green part of scallions and cauliflower. Stirring occasionally and mix well. Add a bit of fish sauce. Contribute cooking until cauliflower is cooked (about 5 min) but not into a mush! It should still have rice texture.
Pour finished “rice” on dish, and top with eggs & tofu. Season as desired. I of course used sriracha :)
