Dinner for tonight is Pan Seared Salmon with Roasted Beet Salad.
Roast 1 whole beet for 40 min on 350 degrees. Prepare orange Supremes and set aside. Cut one half of avocado into cubes. Once the beets are done, let cool, peel the skin then slice into wedges. Spread a bed of fresh baby spinach leaves on plate, toss all salad toppings together, and serve alongside the pan seared lemon pepper salmon.
