Mediterranean style salad. Kale Chickpea Salad with homemade pita chips.
Preheat oven to 450 degrees. Using brown rice tortillas, drizzle some olive oil and spread evenly on tortillas.
Cut into wedges and bake for 5-6 mins checking them frequently because they bake quick. Clean and chop kale, drizzle olive oil and mix in a bowl. Add chickpeas (aka garbanzo beans), grape tomatoes, crumbled feta cheese with Mediterranean herbs, and some cranberries.
