Poached Egg with Smoked Salmon & Quinoa Cake Benedict.

Preheat oven at 400 degrees, mix cooked quinoa with eggs and some panko & season to taste, let sit for a bit to absorb then form into patties, bake in pan with olive oil for 15 min until browned, then flip over and bake another 5 min.


Roast asparagus spears in oven for 15 min with olive oil. Plate with quinoa cake, then asparagus, and layer with smoked salmon (bought at store) and top with poached egg. For a little bit of sweetness, add dried cranberries.
