Spinach Quinoa Cake & Mango Arugula Salad. Using what I already had in the kitchen, I decided to put together this meal.
Mixed cooked quinoa with eggs, spinach, and some japanese panko crumbs. Form into patties and put in skillet. Place on top of a bed of arugula with slices of mango.
