Mediterranean Spinach Pork Frittata



Sunday homemade brunch today is Mediterranean Spinach Pork Frittata!


Heat skillet on high with coconut or olive oil, toss in ground pork formed in small bite size, once browned on both sides, toss in fresh spinach leaves until wilted, then toss in red onion slices. Pour in whisked eggs and wait for it to set but still runny on top.

Preheat oven at 400 while cooking. Spread crumbled feta cheese on top then put into oven for about 5-10 min or until top is cooked.

Take it out and sprinkle rosemary on top, slice and enjoy!
