Sweet Potato Spinach Scramble Sliders.

Cut sweet potatoes into wedges, bake with olive oil for 20 min, flip over, and bake for another 10 min. Scramble eggs with fresh chopped spinach, season to taste. Spread dill cucumber yogurt (bought from store) on wedges with egg/spinach filling and serve.
