Today’s bite sized breakfast is Sweet Potatoe Quiche.
Grate sweet potatoe, press and layer on bottom of cupcake pan, bake for 20 min at 300 degrees. While its baking, I chopped up some watercress, drained the pico de gallo, then combined all with eggs. Once sweet potatoe crust is done baking, fill each cup with filling, then bake for another 20 min.
