Tofu Quinoa Burger on Red Leaf Lettuce with Baked Sweet Potato & Zucchini Fries. That’s what’s for dinner.


Combine firm tofu with cooked quinoa, scallions, onions, garlic powder, black pepper, Himalayan pink salt, eggs and mix well. Form into patties and cook on stove top pan in olive oil.

Pre heat oven to 425. Cut sweet potatoes and zucchini length wise, with skin on. Coat lightly in olive oil with cayenne peppers. Place on parchment paper and bake for 15 min, flip, then bake for another 15 min.

Place patties on sheet of red leaf lettuce, drizzle with sriracha, top with tomato wedge and red leaf lettuce.
