Spinach Egg Crepe & Fruit Egg Crepe



Top: Spinach Egg Crepe. Bottom: Fruit Egg Crepe. Made one savory each for the beau and I, and with the extra crepe, I made a sweet crepe to share.

Savory: Crepes are made with just eggs and egg whites (no flour or other ingredients). Stir fry spinach, fill crepe with spinach, fresh slices of tomatoes and feta cheese, lightly fold over, then top with remainder of fillings.

Sweet: Fill egg crepe with fresh fruit, I used bananas and strawberries, with a side of Greek honey yogurt.
