What to do with extra brown rice tortillas and a couple of purple yams (aka okinawan sweet potatoes) that you have no dish to use them for? Well, make snacks out of them! My homemade and healthy Baked Brown Rice Tortilla and Purple Sweet Potato Chips!
Brown Rice Tortilla Chips: Preheat oven 400 degrees, drizzle olive oil on brown rice tortillas, cut into wedges and bake on baking sheet for only 8 min or so, checking them often. Season as desire.
Purple Sweet Potato Chips: preheat oven to 400 degrees, slice purple yams into thin slices. in a separate bowl, mix olive oil and ground cinnamon, then coat back and front of slices with the oil mixture. Grease baking sheet with olive oil and place the coated slices in one layer. Bake for 5 min, turn over and bake another 5 min or until they harden. Season with additional cinnamon as desire.
