Dinner tonight is Baked Turkey Quinoa Stuffed Artichoke.
Prep whole artichoke, once cleaned and trimmed, add artichoke in pot of water with salt and lemon juice. Once boiled, take artichoke out and let cool a bit upside down.
While waiting for artichoke to boil, preheat oven to 375, cook ground turkey on stove top with chopped onions. Add cooked quinoa and mix in some feta cheese.
Stuff artichoke with filling, then top with more feta cheese and add sun dried tomatoes.
Bake for 15-20 minutes then serve and enjoy!
