Preheat oven to 375. Sauteed minced or diced garlic and kale leaves together in olive oil. Set aside. Roll salmon strips and use toothpick to hold ends together. Place in olive oil greased baking pan with skin side down. Stuff each salmon roll with the sauteed kale leaves, squeeze lemon juice all over. Bake for 10 min.
Cook quinoa with lime juice and mix in diced jalapenos. Grate carrots and mix in after quinoa is cooked.
