Tropical delight! Lemon Peppered Tilapia topped with Mango Jalapeno Salsa with Roasted Carrots Arugula.
Preheat oven to 500, cut whole top of whole carrot and peel. Place in baking pan, and drizzle olive oil and basil. Cover with foil to steam for 15 min, lower heat to 325 then take off foil to roast for 30 min until brown.
Cut mango into cubes, dice de-seeded jalapeno pepper, place into bowl and mix in chopped cilantro leaves and squeeze fresh lime juice. Mix well, cover and place in fridge.
Cook tilapia on stove top pan on medium heat, sprinkled lemon pepper seasoning on both sides. Flip once the fish ends start to flake. Total cook time is approximately 10-15 min.
