Sage Turkey Burger with Baked Sweet Potato Fries



Sage Turkey Burger with Baked Sweet Potato Fries. Made this delicious dinner for our monthiversary dinner. If you’ve been following me, you know that my beau and I always celebrate our relationship monthly in addition to annually….and being the goofball that he is, he calls it “monthiversary” :) call us cheesy.

ANYWAY….one of his favorite meals is burgers and fries so naturally, I made the healthy version of it.
Sweet Potato Fries:
Preheat oven to 450 degrees. Cut 3 small sweet potatoes (approximately 16.5 ounces) into fries. Coat with olive oil, cumin, salt and pepper. Bake for 15 minutes, then flip them over and bake for another 10-15 minutes (depending on your oven).
Burgers:
Cut yellow squash (the thick end of it) in round pieces.
Slice red tomato on vines into round pieces.
Slice avocado wedges.
Set everything aside.
Mix ground turkey with fresh chopped sage and garlic. Add a little salt. Cook in frying pan with olive oil. Then using the same pan, place yellow squash pieces in pan and cook through. The flavors from the turkey burger will cook through the squash.
Plate and serve!
Ingredients:
.7 pounds of ground turkey
4-5 fresh sage leaves (chopped)
2 cloves of garlic (chopped)
3 small sweet potatoes (16.5 ounces)
2 small yellow squash (using just the thick ends and save the rest for another meal!)
Salt and pepper
Olive oil
Cumin
